Banana Pancakes

This is literally the easiest breakfast ever! Low calorie, #glutenfree #paleo #CandidaDiet #Whole30, low glycemic index. When I have a craving for something sweet, these are my go-to option. If the banana is ripe enough, you won’t even miss those sugary toppings.

Ingredients:

1 medium, ripe banana

2 eggs

1/4 tsp. ground cinnamon

1/4 tsp. pumpkin pie spice (substitute with nutmeg or ginger depending on your tastes)

Coconut oil

 

Directions:

Mash the banana in a small bowl. Then incorporate in the eggs. Next mix in your spices.

Heat the coconut oil in a frying pan over low-medium heat. Cook  the first side and then flip. Cook until golden brown. Serve with some fresh fruit, plain or with shredded, unsweetened coconut.

Makes 3-4 pancakes depending on the size of the eggs and banana.
