I’ve been experimenting with different protein bars and bites lately. Today I made these super seed squares. They are perfect for eating before or after a workout, on your way to yoga, or just when you feel like having a snack.
A note about the protein powder, I normally use Pursana Vitality Mix, but it turns the bars a bit green which doesn’t look that appetizing. For this recipe, I used Optimum Nutrition Gold Standard Whey: Double Chocolate flavor. There are much healthier options that this one, so I challenge you to use your own brand.
*Ingredients*
- 1-TB Sunflower seeds
- 2-TB Finely shredded coconut
- 1-TB Chia Seeds
- 1-TB Pumpkin seeds
- 2-TB Slivered, unshelled almonds
- 2-TB Dried cranberries
- 1-TB Protein powder (you can use which ever kind you buy.)
- 15-Dates, pitted
*Method*
Step 1: Add all ingredients together but for the dates.
Step 2: Put the dates in your food processor or use a stick blender like I do 😉 It’s going to be a bit tough because the dates are sticky, but it’s worth it. As they say, nothing wonderful ever came easily, right?
Step 3: Mix the seeds mixture in with the dates. I did it with a spoon, but maybe it could be done in a food processor as well. It should look something like this:
Step 4: Press the mixture into a tupperware or some kind of dish. Then cover and place in the refrigerator.
After an hour or two, you can take them out, cut and serve. I would store them in the refrigerator until they are gone. I think they just taste better chilled.
