Lemon Chia Seed Protein Pancakes

I love lemons. Plain and simple. 🙂 I have been craving lemon poppy seed *anything* so I decided to try pancakes and use chia seeds since they are supposed to be really healthy and I had them in stock.

 

*Ingredients*

  • 1-ripe banana (choose a ripe one because that’s what will add sweetness to the cakes)
  • 2-eggs
  • 1-Tb. chia seeds
  • 2-Tb. protein powder (I think vanilla would be optimal here, but I used chocolate flavored)
  • 1/2 of a lemon’s juice
  • Lemon zest of one lemon- about 1.5 tsp.
  • 1 Tb coconut oil

 

*Method*

Step 1: Mash the banana

Step 2: Heat the coconut oil over low-medium heat (will depend on your stove)

Step 3: Add the other ingredients and incorporate well.

Step 4: Pour the batter in. I only cook one at a time, but you could do multiple. I always mess them up when flipping if I do multiple. Some day I’ll get better at this. 😉

Step 5: Flip the pancake after several minutes or when golden brown.

Serve with fresh fruit and enjoy! I used raspberries, blackberries, and pomegranate seeds.

Makes 4 pancakes. (I ate one before the photo. hehe)
