Zoodles and Meatballs

In the past I’ve used my spiralizer, but ended up baking the zoodles with lemon, lime, salt and pepper. However, my brilliant mom suggested I just sauté them in a skillet, and that’s what I did. They turned out just perfect! Here in Belgium, you can find ready-made meatballs for days so I did not attempt to make my own. This is a super easy and quick meal for busy week nights!

*Ingredients*

  • 1-2 large Zucchinis
  • 1-roma tomato, chopped
  • Black pepper
  • Sea salt
  • Oregano
  • Pre-made meat balls
  • Olive oil

*Method*

Step 1: Wash and then spiralize the zoodles.

Step 2: Toss zoodles with a tablespoon of olive oil, spices and tomato.

Step 3: Cover and heat over medium-low heat. Don’t let them burn or get too crispy. You are essentially just heating all of these ingredients up.

Serve with your pre-made meat balls and your favorite sauce. We tried arrabbiata sauce and also my avocado sauce. This was delicious!
