Coconut Cacao Cookies

Recently, I’ve been more rebellious than Whole30. One day I had a sweet tooth and decided to just whip up something dairy-free and gluten-free and only sweetened with honey. Here’s my little creation.

*Ingredients*

  • 1/4 cup almond flour
  • 1/8 cup coconut flour
  • 1 tsp basing powder
  • 1-Scoop chocolate protein powder
  • 1/2 tsp cinnamon
  • 1/2 tsp almond extract
  • 2-3 TB honey
  • 1-2 TB cacao nibs

Combine the dry ingredients and then add in the liquid ingredients. Bake at 350°F/180°C for 8-10 minutes. You want them to cook enough so that they begin to brown but not so much that they end up dry. You’ll want to keep a close eye on these because the recipe only makes 4 cookies, and all ovens are not the same.

Let them cool for a few minutes and then enjoy plain or with a glass of almond milk.
