This morning I woke up super early and got all my grocery shopping done just before it started to rain. First #winoftheday!
To counter the not-so-nice weather, I made these yummy banana-protein-powder-pancakes with berries and raw coconut on top.
I’m very excited that @purasanabelgium now makes protein shakes. I almost shouted “YES!” when I discovered the new display at the Bio store. This time I bought the Vegan Hemp, Pumpkin, and Sunflower Protein Powder (cocoa taste).
So far I’m really impressed. It’s not so easy to find non-whey powders in Belgium and there’s just not that much variety. And variety is the spice of life, right? So Go Purasana! They also have a host of other products and powders which are fun to try as well.
Inspired by my new protein powder, I livened up my usual banana pancakes this morning with some protein powder. Mmmmm
*Pancake Ingredients*
- 1-ripe banana
- 2-eggs
- Dash of cinnamon and/or cloves
- 1-scoop of protein powder (I used Purasana Hemp, Pumpkin, and Sunflower Seed Vegan Protein Powder)
- Coconut oil
*Heavenly Berry Sauce Ingredients*
- 1-strawberry (fresh or slightly thawed and out of the freezer)
- 6-raspberries
- 5-blackberries
*Method*
Step 1: Mash the banana with a fork and then add the eggs. Fully incorporate the eggs and then add the spices and protein powder; carefully mixing so that it doesn’t spill.
Step 2: Heat a spoon of coconut oil in a skillet over low-medium heat and then pour the batter into the pan. My mixture was a bit thick so I used the back of a spoon to spread it out more smoothly.
Keep an eye on the pancakes so they don’t burn. When they are a nice golden color, flip.
Step 3: Put the berries in a bowl and mash them until they become sauce!
Makes 4 fluffy pancakes
