Avocado Brownies

I’ve gotten lots of positive feedback on these yummy and moist brownies, so I thought I’d share them. In the Whole30 Program, you’re not supposed to have any sugars (including natural sugars like honey), but sometimes you need to make an exception- like tomorrow being my 29th birthday! I think you get the idea despite some of the candles being broken. 🙂

*Ingredients*

  • 1 Avocado
  • 1 ripe banana (or 3/4 cup unsweetened apple sauce)
  • 1/2- 3/4 cup honey (depends on your tastes)
  • 3 eggs
  • 1/2 cup cacao powder
  • 1 tsp baking soda
  • 1/8 tsp sea salt
  • 1/2 cup coconut flour
  • 1 Tb vanilla extract

*Method*

These are super easy to make. Just mix everything together with a stick blender and then pour the batter into a pan lined with parchment paper.

Depending on the size of the eggs, banana, and avocado, you may have batter that comes out rather thick. You could always add another half of a banana if it’s too thick.

 

Bake at 350° F or 180° C for 45-60 minutes. I prefer these cooled in the refrigerator for several hours, but they taste yummy when warm too.
