This recipe was inspired by The Candida Diet‘s recipe. I find this recipe to be a nice light dinner or lunch. It’s possible to make these ahead of time and freeze them for a quick meal option.
*Ingredients*
- 1 cup cooked quinoa
- 1 large rutabaga, shredded
- 3 green onions, sliced
- 1 large clove of garlic
- 2 eggs, lightly beaten
- 1/4 tsp. parsley
- 1Tb. turmeric
- 1/4 tsp. black pepper
- 2 Tb. olive oil
- 1/2 tsp. paprika
*Method*
Preheat the oven to 425° F / 218°C.
Mix all ingredients together and form a ball of the mixture and then place on an oiled cookie sheet. Flatten with your hand or a spoon until it looks like a patty.
Bake for 10-15 minutes then flip them and cook for another 10 minutes.
Remove from the oven and serve on a bed of greens with sliced radish. Top with green onions and a tablespoon of green yogurt or tzatziki sauce.
